This may be a silly question but which airlines fly pets in the cabin to Hong Kong from say Sydney?

I don’t think any would. There are intense restrictions when leaving/arriving to and from Australia. I don’t see any airlines allowing pets in the cabin unfortunately simply because of that.
Also pets can’t be in the cabin anywhere. Regardless of location they must go in the hold
Apart from Ryanair. I think they allow some small pets in the cabin on short routes that are between the UK and Ireland (or something like that)
They must go in the hold, there is no other option. Travelling is very stressful for the pets, I won’t recommend it unless it is absolutely necessary.
My dog travelled from Doha to Hong Kong, since we were moving, and for some reason he had to go in a cargo plane.
It would cool to have a pet class where owners get seperate rooms with their pets. But the weight would be a lot.
I have seen a cat on a plane once (it was on Air France or KLM) and seen a lot of other stories about bringing pets on planes. Check with the airline.
