She will do FL630 in level flight within the MMO (M0.87)
SOFIA can reach FL400 pretty quickly.

I climb in a 787-9 up to 38000 5000/m 250kts in one go
The SOFIA! Not only is it meant for high altitudes, you can see the door open and close at 40000 feet. (Starts around 3900 for me)
