Levet made a review on the 2021 version of the iPad Pro 12’9. It’s quite expensive but the best of the best. I myself have an iPad Pro 12’9 in the Gen 4 version, it works like a beauty.

For a good, cheap iPad I recommend the iPad 8th generation/iPad 10.2 inch.

It’s really just what’s best for you. The thread linked by @kyleditching takes you through high-end to mid-range devices, Apple and Android devices. Take a look at their specs and prices to see what works best for you.

If you’ve got the cash, get the new M1 iPad Pro. It’s got performance but opt for a smaller screen size, I find it easier to fly with a smaller screen as it’s less to hold on to and cheaper!
