The rare special plane I flew on was the Airbus A340-600 operated by Lufthansa, Boeing 747-8 also by Lufthansa, Boeing 747-400 also by Lufthansa and Delta Airlines Boeing 717. But I was able to board a B25 Mitchell didn’t get a chance to fly.
From what I remember (so far) I’ve flown on a couple “special” planes, all on JetBlue.

I cannot remember if I got to fly on th I <3 NY plane or not
(I think) N605JB before it was repainted to the modern-day Red Sox Livery
And finally, similarly to @Anthony_Gulluscio, I also got the priveledge to fly on one of the E190’s from Orlando to DCA (the plane to our left at MCO was the JetBlue Vactations livery, which I thought was pretty cool)
There’s 3 JetBlue vacation planes. I’ve been on one, and also I swear I see them every single time I fly into Mco or jfk.
The rarest plane I’ve ever flown is definitely an a320 operated by Aero Dili. I flew on this aircraft earlier this month. Registered 4W-AAL
And the most special that I’ve flown on was the Air Tahiti Nui 787-9. I remember flying from KLAX-NTAA in IF with that livery and being blown away by how beautiful Tahiti was. And I said one day I would go there in real life.
Last year I managed to go there, and flew on F-OVAA, the same registered plane as the one in IF, named ‘Bora Bora’. It was an amazing moment for me
Not really rare, but strange: United 772 from KORD to KDEN. I’m still confused why there’s so many passengers for this route that they have to operate such a big plane

I have also flown on some quite rare planes as well, albeit within Europe. They are as follows:
- Tarom ATR 42-500 between Bucharest and Cluj and once in 2012-2013, I think, between Bucharest and Targu Mures, in Romania (they are unfortunately no longer in their fleet, as they have been sold to some Caribbean airlines, as far as I understood).
- Tyrolean Airways (which then folded into Austrian Airlines) Dash 8-400 between Frankfurt and Innsbruck and back (these planes were retired from their fleet a few years ago).
- LOT Polish Airlines Dash 8-400 between Cluj and Warsaw and back (unfortunately, these planes were retired from their fleet at the beginning of 2023).
- Icelandair Boeing 757-200 and 300 between Copenhagen and Reykjavik and back.
