When using fighters, normal. Normally, I would use high

I always use high sensitivity and can never keep my shaky hands still on landing.

I always use Normal. Never bothered to tamper with it.

When using a joystick, the sensitivity is controlled by a slider. In the controller screen the sensitivity is displayed as a percentage. 75% is the default sensitivity, but I slide mine down to 50%.

It helps me prevent PIO (pilot induced oscillation). Maybe it’s from too much coffee.

Normal.
Tried High for a long time but felt uncomfortable.

I used normal for a while but the response was too slow, so I started using high. My landings are way better and I generally prefer it! :)

I use low, exept when I fly the A380 or B747 I use normal.
