So I’m planning to fly out of Amarillo with a 737. I’ve read the METAR, and visibility’s 1/4SM. So the question is, are planes grounded at that low of visibility? Or is it fine to fly out?

I think it would be IFR only in those conditions.
In real life, standard IFR takeoff minimums for two engine aircraft that are operated by an airline are 1 mile visibility but can be lower if allowed by the FAA.
