Today, I was downgraded from Grade 3 to Grade 2 after accruing six Level 1 violations for speed within a week. Since the first set of violations were issued on Saturday and the second set today, how long will I have to wait before being re-admitted to Grade 3 and the expert server? Would it be Saturday or next week Monday?

Keep an eye on that speed! 6 violations within a week is an oddly high number and you won’t be able to continuously retain access to the expert server with such violation accruals.
I believe you will be able to return to the expert server next Monday based on the fact that your most recent set of violations was issued today.
Yes, both occasions were mistakes since I overestimated the duration of the flights, and was away from my iPad. This has never happened before at this frequency
Best course of action would be to avoid arming VNAV until you are able to monitor your flight till the very end. Packing a bit of extra fuel for those occasions where your real world schedule may change unexpectedly helps a great deal too.
It may not be a bad idea to experiment with this on the casual server in the mean time so you can find a timing and flight planning that works for you! :)

You should be able to return to the expert server Saturday, because on Saturday you will no longer have 5 violations within the preceding 7 days (requirement for grade 3).
That’s some solid advice above that I would also recommend! I’ve made the same mistake many times before too!
Also,
by the time the day comes when you are able to re-join the expert sever, be sure to enter a casual server flight and you will be good to go! :)
