Changing the temperature setting can affect your flight experience. it will be harder and if you set it in extreme setting you will feel harder to control your plane. It will shaken the plane hardly and the landings will be super hard. (Ex.Crosswing landings)
Usually people change weather setting because they want to get harder experience of flight. If you want to train yourself how to fly then you should probaby just change the setting to the lowest possible.
If you increase the temp, it becomes harder for the plane to gain speed and thus take off. You would need to plan accordingly to adjust the weight of your plane/temp outside/runways of choice if setting it high up. Conversely, if you set the temp to some cold, then you’d get much better performance.
The wind in the game will either hinder the speed, help the speed, or toy around with the flight of your plane. Depends on what heading you set the wind to blow at but if the wind is traveling in the same direction as you, then you will experience an easier time getting to speed. If you’re flying into the wind, then it’ll be harder to accelerate to speed. If you’re being hit by wind from the side (Crosswind), then the plane will be shifting in the direction the wind is blowing. You can also put wind gusts in to make things more juicy,
Turbulence will make the flight bumpy. Long story short, turbulence will toss you plane around in all directions and it could even spin you out of control. The heavier you are, the more control you have in higher turbulence levels. Plan your weight and turbulence levels accordingly.
Higher temperature = less lift / worse performance
Lower temperature = higher lift / better performance.
There is something called ISA, which sais the temperature at sea level should be +15 degrees celsius. So if the temperature is higher then this your performance goes down, if its lower it will go up.
The wind is very important. When you want to take off you prefer a headwind, try to take off with a direct 40 knots headwind in any big jet and then in a 40 knot tailwind. This is very extreme and out of the limits but it will be the best to show you instead of explaining it all. Most probably with the tailwind you won’t be able to get airborne.

Get a Cessna 172, and do a couple of take-offs at say KASE in Denver or L35 in SoCal - one with 15degree setting, one with max temp setting. You’ll see the difference for sure :)
