If you want some challenging aiports, I think you should fly to San Sebastian (EAS/LESO), also Tivat (TIV/LYTV), Split (SPU/LDSP), Calvi (CLY/LFKC)

VLC-EAS (50mn)
CDG-CLY (1:20hrs)
LGW-SPU (2:05hrs)
MAN-TIV (2:45hrs)

Then you can do some long haul flights like:
JFK-FCO (ITA A359)
CAI-LHR (EGYPTAIR B77W)
PEK-ARN (AIR CHINA A359)
VCP-MCO (AZUL A339/A350)

enjoy those flights, be careful at San Sebastian, is my home airport and is quite difficult to land ;)
