You fly off magnetic headings.
True heading points to the northernmost point on earth, whereas magnetic heading points to the magnetic north. Compasses work relative to the magnetic north and that is the standard for all navigation

True heading uses the true north(the point where all longitudes meet on the north pole)
Magnetic heading uses the magnetic north which changes every year by 2"
