For the sake of realism, how many pax do I load into my plane for WSSS-KJFK/KEWR, or in simpler terms what is the average amount of people onboard the aircraft.

The IRL aircraft that do this route [A350-900ULR] have a passenger capacity of 161 - 67 business, 94 economy.
I would say somewhere around 150 is probably a realistic load factor.

Iām surprised that many people would do that flight, even a premium economy ticket is around 1500usd
The nature of it is tailored more to the business traveller who need to get from point A to point B as quickly as possible. Both Singapore and NY are major business hubs so it makes sense.

My family and I flew on SQ24 back in autumn 2022, just after the route was relaunched post-COVID. We were in Business Class, and it honestly felt like staying in a mini hotel. I could only manage one proper sleep because the time zone shift completely messed me up when we reached in North America 
Singapore Airlines even used to fly an all-Business Class A340-500 to the U.S, but sadly it was retired before I was old enough to experience it :ā)
