It seems that the specific flight you pointed out is the last QF9 flight to use MEL-DXB-LHR routing in A380-800 (Which left Melbourne yesterday). Since today, the route will be rerouted from MEL-PER-LHR in 787-9 instead according to Flightradar24.

QF9 will never again go through Dubai. Instead the Melbourne to London flight will now go via Perth and use the more fuel efficient 787
You have to understand what happens on Infinite Flight could be different then what happens in the real world. A 1 Hour flight could take 30 minutes on Infinite Flight.
