Ingredients

Instructions
1. Heat the Oil: In a caldero (a traditional Puerto Rican cooking pot) or a large heavy-bottomed pot, heat the oil over medium heat.
2. Cook the Sofrito: Add the sofrito to the oil and sauté for 2–3 minutes until fragrant. Then, stir in the tomato sauce, diced ham or salt pork (if using), sazón, adobo, black pepper, and oregano. Cook for another 2–3 minutes to allow the flavors to meld.
3. Add Gandules and Rice: Stir in the pigeon peas and mix well to coat them in the seasoning. Then add the rinsed rice and stir until the grains are evenly coated.
4. Add Liquid and Olives: Pour in the water or chicken broth and add the olives and bay leaves. Bring to a boil.
5. Cook the Rice: Once boiling, reduce the heat to low and cover tightly with a lid. If you want to be traditional, you can place a small banana leaf over the rice before covering it to infuse the dish with subtle flavor.
6. Simmer Until Done: Let the rice cook for about 20–25 minutes, undisturbed. Check at the 20-minute mark to ensure all the liquid is absorbed. If needed, fluff the rice with a fork and let it sit for an additional 5 minutes with the heat off.
