I’m not sure exactly, but usually anything above 20 knots is considered turbulance.
And how much wind in mid flight would you say would be turbulence because it’s 103kts now and I don’t have much turbulence. 🙏 ❤️

It also depends on the wind speeds changing and other factors. Wind speeds above 100kts at high altitudes aren’t something too rare
Turbulence can happen at any wind speed
Turbulence happens when the airflow isn’t perfectly smooth.
You can see the arrow pointing downward which would be at you, this means you’re getting headwinds which would cause less turbulence. If the arrow was pointed left or right, that’s crosswind in which the effect the winds will have on your aircraft may increase in terms of turbulence.

The standby instruments indicate that you are at fl370. 264/107 means the wind is blowing from a heading of 264 at 107 knots. At these altitudes, that is perfectly normal because you will encounter jetstreams (more information about jetstreams: Jet stream - Wikipedia)
There are different kinds of turbulence you can experience while cruising:
- Frontal turbulence

Just to clarify here, wind in blowing from direction of 264° and blowing towards 84°
^This exactly. You could have 100 knot winds and have (relatively) little turbulence where your plane just sort of bobs around. You could also have 30 knot winds with altitude fluctuations of 100 feet or more. It just kind of depends on where you are.

The way to decode this is as follows:
HDG/SPD
For example, the winds could be 140/12, meaning the wind is 12kts at 140 degrees. Hopefully this helps
