Rockies in Colorado, Japan, Himalayas, Alps, you can’t go wrong with mountain ranges anywhere.
Innsbruck (LOWI) lovely mountain ranges and a very interesting approach. I recommend watching videos on the approach to familiarise yourself with it.

Swiss Alps!
Check out KASE. Many mountains and a pretty difficult approach if you are up for the challenge
VNKT Kathmandu. Approach is challenging and fun at the same time. Its in the Himalayas, Mount Everest can be seen from there. Fly around Lukla and try to do the world’s most challenging approach into Paro, Bhutan!
The Sierra Nevada range is really cool
The Mountains between Oregon and Idaho, Patagonia, the mountains in Alaska, Atlas Mountains, so many you can do!
Go land at KJAC Runway 19 those mountains are awesome.

Flying to Paro Bhutan is a really cool place to get some screen shots of the approach. I flew there with my VA and the scenery was beautiful! Highly recommended.
And extending to Italy, France, Germany, Austria, … Just a great area to fly in!

Try approaching Christchurch from the west. It brings you right through the mountains
Paro airport is really nice fly from Kathmandu- Paro
For mountains that is my favorite route.
Also another one that has a amazing approach.
