Little question

On some oceanic flights, the tracks allow for altitudes opposite to direction of travel. It isn’t a given that you must always follow the east/west altitude rules, although they are common. Just putting it out there

Not the motion of aircraft. Did the wind go from 100 to 180 instantly, or in 2 kts steps? Cuz that’s what is supposed to happen.
What you are descibing is probably turbulence.
