Do I have bad luck on this game, because every time I want to fly over the Atlantic there’s no track in the direction I want to fly, the actives runways always change from the ones that I have a flight plan filed for, and at ifatc hubs every time I go there tower and ground always goes offline
Most of that would most likely be odd timing. With the tracks, they are published when the needed traffic is about to need to use a track in the specific direction. This all happens to the best of us, and it’s not really just bad luck. It annoys everyone as much as it annoys you.
The track is updated based on the real world. Winds change and runways change. IFATC are volunteers and not obligated to be there all day if they choose.

I can guarantee you IFATC do not go offline as soon as they see you arrive. They won’t be thinking ohh is that @MadridistaPilot oh I don’t want to be his approach or clear him for landing. They are far, far too busy for that and maybe don’t even know who you are, we have over 40,000 users on the IFC, perhaps try flying at a different time of day to see if you get luckier with NATS and ATC there definitely are busier times…

Happens to me as well. No worries
Yesterday I looked on flight radar 24 planes landing at runway 31L and 31R at KJFK but on infinite flight runway 22L and 22R was green and was active at the same time how does that happen.
Ok it just happens to me often it’s fine though :)
Firstly, green does not mean active. It just means that’s which runway(s) is/are best suited by the wind.
IFATC don’t always use the same runway that is being used IRL. This is because where in real life you might have 15 arrivals into an airport, in IF, there are might be 150 so procedures must be adapted to fit the higher traffic flow.
