I have completely forgotten how to setup APPR, set altitudes for waypoints and the works.
It would be very helpful if someone could tell me how to set them up.

Hey, welcome back buddy!
For setting up APPR, you may go into the airport’s info, runways and select the runway on which you want to land on and set it as NAV 1 [If that runway has ILS active]. That’s all for Appr.
Setting up altitudes is just that you go to your FPL, select the way point and from the button below named “OPT” you can set it up easily.
We have a lot of new cool updates and tools, you may wanna check the Manual and YT page, as RyanR already said.
Additionally, apart from the video tutorials, I’d recommend taking a look at the User Guide. It is updated to the latest version, 24.3, and includes useful information about flying, controlling, support, and UI.

and a quick summary of some highlights:

Less than about 30 degrees intercept angle to runway,
far enough out on the approach cone so the glideslope is above you,
while level at about 3000 feet agl,
with IAS at or below, say, about 220kts,
and practice a few times to verify you confidently can capture the glideslope as it comes down to meet your level altitude, before you try it out under ATC on Expert Server.
For setting waypoint altitudes, look on the FPL page when you go to the map. The second button from the right has been added: “OPT.”
Selecting OPT., gives, as the first option, “Set Altitude”.
