I have decided to fly a Deer Jet 787-8 from ZSPD to EGKK and I know that that is the featured airport of the week and I know it is possible that it will have active IFATC controlling it and that it will be busy so I don’t want to to annoy whoever may be controlling EGKK when I get in so here is my question would the callsign 2-DEER be an acceptable callsign regarding the length?

2-DEER isn’t very obnoxious. It’s the same length as a lot of GA callsigns. Thanks for looking out for your IFATC though, we appreciate it. Just keep it appropriate and everyone should be happy 👍
It’s far shorter than most VA callsigns, so it would be fine.
Just so you know, as mentioned here, if the controller isn’t happy with your callsign, finding it offensive, he will send you a command saying
‘2-DEER, please change callsign or you will be ghosted.’
There is no worry with you having this command, there have been several worse and more annyoing 🙃
Literally nothing is offensive about it. You should be fine.
Just to clarify this statement so that y’all aren’t freaked out. When and if you’re ever issued “please change callsign or you will be ghosted”, does not mean you’re going to be ghosted instantly. What this means is, ATC will give you a few minutes to change your callsign. If you fail to do so, only then will you be ghosted. Our controllers are good at asking other senior ATC individuals if a callsign falls under the inappropriate category prior to sending that message.
Only then if the callsign is deemed inappropriate and after the pilot was given ample time to change the callsign, will the user be ghosted for “inappropriate callsign” or something similar.
I’ve seen a lot of folks jet out the server as soon as they get hit with this command. They hear ghosted and dip out. There’s no need, just listen to what ATC said, change the callsign and carry on. It shows ATC that you’re good at following instructions. Not a bad thing!

As to whether you would have any ghosting issues, See @DeerCrusher’s response above.
However, you asked whether it would be “annoying,” which is a completely different question. From my point of view, 2-DEER would not be an annoying callsign. Moreover, as ATC, I like it when certain aircraft have unique callsigns because it makes it much easier to keep track of as opposed to when everyone has a generic callsign such as N123PR.
What I find annoying is people who choose callsigns that are a long word. For example, if a pilot uses TERMINATOR as a callsign, that would be annoying because it would read as: “TANGO ECHO ROMEO MIKE INDIA NOVEMBER ALPHA TANGO OSCAR ROMEO.” Your particular callsign is not annoying because it can be read quickly as TWO DELTA ECHO ECHO ROMEO.
