Hydraulic fluid

Can someone explain to me what hydraulic fluid is and what its function is. It doesn’t make any sense to me anywhere online.

Hydraulic fluid is pressureized then used to perform work. Moving alerons, elevators, flaps, spoilers, gears, brakes, prop pitch, etc

Think about it like this.
You have two syringes connected by a thin tube at their spouts, one filled with water. When you push the plunger of one syringe (syringe 1), all the water is forced into the other syringe (syringe 2) and syringe 2 fills with water causing the plunger to move outward.

Now, lets say the that I have a pencil attached to syringe 2, and I push the plunger of syringe 1 (which is filled with water), water fills syringe 2, moving the plunger outward and moving the pencil with it.
