How do.i properly make a plane spotting video.
Do i do it in the game itself or in the replay.
And if its in either of them, how do i follow an aircraft taking off or landing without letting the UI come on when i touch the screen
And one thing also is that the planes disappear after sometime without even taking off. How do i fix that also
Go to settings - hide plane name and dots, then do it in replay
Hold anywhere on the screen to hide the replay UI

In terms of your last question, unfortunately at busy airports only so many planes can be rendered. You can change that in your settings - online - airplane count — you can change between very high scaled down to none. However, the very high setting has its limits, and thus when a plane gets too far away from your camera (and by too far away, I mean a distance that depends on how many planes are present), then it will stop rendering and effectively “disappear” on your screen
