I am new to the simulator and do not understand how trim works, can someone explain?

Basically, trim offsets your elevator by a certain amount. This can be very useful when preparing to turn off your auto pilot or when flying in situations that will require a lot of elevator use in a single direction. The ultimate reality though is that trim does not do as much in IF as some claim, nor does it do as much in IF as it does in real life. IRL, trim is used to balance the aircraft controls. Think of it like moving a weight along a balancing beam. Someone sets something on one end of the beam, and so your weight (trim) is moved to the other side to counter the added weight and keep the beam balanced.
If you’re curious go more detailed outlines and how exactly to use it in each situation, I would definitely recommend using YouTube or AI resources, as these will definitely be more comprehensive than what I’ve said above!
If you’re looking to just learn how to fly, don’t worry about the autopilot or trim, just practice hand flying. You’re going to crash a lot, but you’ll get the hang of it with practice!

Should I use joystick or tilt controls?
It depends on one’s preferences, to be honest. I, for one, prefer the latter.
If you are comfortable with the tilt controls, as a lot of flyers in the Infinite Flight Community do, then go ahead and use the tilt controls. You can also adjust the sensitivity of the tilt to the configuration you are most comfortable with. Otherwise, you can choose the joystick.
Before you do anything else, however, it is highly recommended to test them all out.

Trim basically does a certain amount of input for you so you dont have to make a heavy tilting such as going up or down.
helps you to maintain the aircraft with less tilting -
i use it generally when i am laying down and cant tilt up as much as needed or if theres wind!
its a crime but i even put it on %100 sometimes 
Made EXTREMLY simple trim releases unnecessary pressure you input and helps the plane climb or descent.
Trim adjusts your horizontal stabilizer, not your elevator. That’s also one of the issues I’ve pointed out to staff and I don’t think it’s fixed yet.

Trimming down goes up and up goes down. It may seem confusing, but it will make sense once you use the trim tool in the sim and you see how the flight controls work. Feel free to ask further questions
