I plan my flights by writing them in a notebook and checking them off when i complete them
Just depends how im flying, at the VA that I am staff member on we have what is called a medallion system, it was designed by @Twocflyer, to help pilots complete flights at the VA’s hubs. It also marks achievements for our pilots. but it is a great way to “check off” whats been flown.
Otherwise, when picking routes to fly, i see what airports are active by IFATC coverage, decide if a route looks appealing, and fly it if need be.
