As dumb as this sound, I’ve been going in the Action section in Infinite Flight on planes that work & the door section isn’t there… how do I open them?

You have to go to the flying menu on Systems and press Passengers Cargo, and pretty much all of them there… Send a screenshot because I haven’t played for a while and I may be wrong.
There unfortunately isn’t a way to manually open each door. They automatically open when you, like @canton said, activate the corresponding ground services.
I only have “Wipers”

That is the actions tab you’re looking at. The option to manually open the doors was removed to simplify their use. There is a “ground services” tab all the way in the top right, open those and click “passengers” and “cargo”. That should open the necessary doors!

They aren’t opening
Some aircraft don’t have opening doors. Try one of the following aircraft: B777 family, A220, B757 A333, A339, or the CRJ family. Also be sure to have your parking brake enabled and your beacons set to OFF

Considering like for gates and ground services, these aircraft:
A220-200
A330-300 and A339 neo
A350-900 but just the cargo doors
757-200
777 family
CRJs
not sure about the McDonnell Douglas aircraft. I don’t know what is and isn’t free but you can make it out from that list
