Pause the flight, click your stats on the upper left, click your current callsign, and change it to whatever you want and click ok.

I cant find the Stats though.
You can find your Stats in the same place (immediately after you tap on the top right corner where your name, XP and flight time is displayed)
After you tap that, below you’ll find something like your grade and so on, you’ll be able to tap on it or something around it to see your stats
