If you simply fail one stage of the tutorial you start all over again. But this doesn’t effect me anymore since I taught myself the control but it will effect new players. But the steering is so hard, once I fully flipped my device it barely even moved the plane. Please fix it!
go to setting and press controls, there you can change the sensitivity. Also welcome to the community!

Also, don’t forget to calibrate your device. This can be done by pressing the 3 horizontal bars at the bottom right of the screen, tap calibrate, and resume.

In addition to what @RickG said, you can also apply Trim to your elevator to make it easier to tilt the aircraft up/down.

I don’t know if this might be the same issue I encountered or not, but I mention it just in case.
With my device, if the screen display has auto-flipped because I picked up my device upside down from the usual orientation, roll control becomes completely disabled. But because I still retained pitch control, I didn’t notice the issue until it was too late (any banking tendency just continued with no roll control availble to stop it).
This doesn’t respond to calibration. Only flipping the device 180 degrees around resumes roll control.
This has been previously noted in another support topic.
edit: Testing this again I get a somewhat different result - with screen flip my bank control becomes reversed rather than disabled (still bad results if not noticed in time of course)
