Welcome. I never used a joystick for Infinite Flight, but this tutorial may help you. Be sure to take a read.

on-screen joysticks are sadly not available without third-party.

I believe this is a on screen joystick that you may be interested in (not on the infinite flight app itself but a third party app)
as far as I know, it is not possible to have on screen joy sticks like other flight simulators
