So does that mean that after 90 days, all the flight time and landings are reset to 0?
It is a count of your flight time or landings over the last 90 days. Anything that you did 91, 92, 93… days ago is not counted in that total.

You do not have sufficient flying in the last 90 Days, all you need is to a long haul, and you will be back on Expert Server.
Think of it like this:
You flew a long haul 89 days ago. A 10 hour long haul, and you are 5 hours over the 90 day requirement. A day passes. That long haul was now 90 days ago. You are still 5 hours over the 90 day requirement. Another day passes. That long haul was now 91 days ago - it’s not longer counted within 90 day activity. Thus, you’re 5 hours UNDER the requirement and you drop a grade.
