To change your call sign, select multiplayer mode which will show your current call sign, press that and you can change it!

There is currently no way to change your callsign when in a flight session - you can vote for a partial return to the feature here:

Prior to 24.3, pilots were allowed to change their callsign at any point during a flight. That was a nuisance for ATC, so the update that reworked the Cessna Caravan put an end to that.
