Also how do you take pictures with no HUD?
The HUD is only in the cockpit and HUD camera views. I think you mean the interface with all the controls. *Settings → General → Interface Timeout → 2 secs
You shouldn’t have had your gear down, unless you were flying a pattern.

Yeah, the camera constantly moves, so it’s hard to get that perfect angle :/

Try to use the normal/locked views, they work a lot better.
