I’ve noticed that the ground power under the ground options doesn’t actually supply power to the aircraft and I have to start the APU to get power to the aircraft when I spawn in. Does the APU burn fuel while on while sitting at the gate while I do flight prep and building my flight flight plan and what not?

So you’re saying that I need to add fuel from what SimBrief tells me my block fuel to run my APU in Infinite Flight for 45 minutes or so, maybe an hour while I do preflight or waiting for others in a flash flight? I know the APU will burn your onboard fuel, just wondering if Infinite Flight does it definitively since the GPU doesn’t work …

It should. However, according to my observation the fuel consumption display shows 0 I also tested with 0 fuel in the aeroplane and the APU worked so I assume it is not simulated like that in infinite flight.
Normally, when you turn on the batteries without any auxiliary power support, you should get a little bit of electricity in the aeroplanes but it is not simulated in this way either. They will add GPU connection in further updates.
@MathiasG APU in commercial airliners uses diesel fuel rather than Jet-Fuel.
There are electric-powered APUs as well but not commonly used in commercial airliners.
Are we talking about real life APU’s or the ones we have in IF? The ones in IF do not consume any fuel. I’ve tested them over more than an hour in several airframes and the amount of fuel did not decrease.
