I have a question: if I’m on a long flight, say about 15 hours, and I decide to step away after takeoff and stabilization, leaving the game running on my device, is there a chance that an ATC might try to contact me? If that happens, would I be penalized? Also, if I’m flying a route that crosses over an airport with an active ATC, would I need to contact them even if I’m at cruising altitude?
No, you wouldn be penalized so long as you’re working with center and at your cruising altitude.
They (center) might if the “away” icon doesn’t work properly, but no reasonable ATC is going to report you for that as long as you’re stable at cruise above FL280. Even if you come check on your device and you’re in the middle of a controlled FIR they won’t bother you if you don’t call them.

“After 2 minutes of inactivity (i.e. no input with your device), your aircraft will be shown to controllers as “away”. Provided you are in the cruise, this will let them know that you are unlikely to respond and any conflicts are assumed unintentional!”
