I’m not complaining or anything, I love this app and play everyday for hours.
But does anyone know why some cockpits, (Mainly Boeing), does display the avionics or autopilot or anything?

I’m assuming you are referring to the live cockpits?
Not all aircraft in Infinite Flight have live cockpits, however a good chunk of them do. The ones that don’t will (most likely) receive live, animated cockpits when they eventually get reworked.

Yes the 787 will have a live cockpit and 3d interior
