Ingredients:

  • 1 eggplant, cut into 1/2-inch cubes

  • 1 yellow squash, sliced into rounds
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 4 cloves garlic, minced

  • 1/4 cup olive oil
