I have a current monthly sub but I want to change to yearly now, not at the end of the current sub. I can’t find a way to do that,

Unfortunately, that’s not possible with Play Store & Infinite Flight.
You will need to cancel your existing subscription and wait for it to expire. Then when it has expired, you can resubscribe for the yearly option.
