It’s incredibly annoying that I can’t change my callsign in flight, and I don’t know why this was ever changed. It happens to often where I create a whole flight plan and then I see I have emirates 7580 super on my delta e175 XD, and then I have to start all over again. I used to simply be able to go to settings and change it in flight from there if I forgot before hand, but I can not do so now. My suggestion is to either remove this dumb restriction, or have a poppup opon clicking start flight which makes us choose a callsign. I hope something like this could be added and I guess most would feel the same. Thank you, good day

Agreed. I think it didnt need to be removed
Well, actually you can change it once you are in AP+. But not on ground. So the laughter of the other pilots when taxiing with your E-Jet on a Super Callsign remains on your side. 
Try to build a routine like you do with your flight plan. Choose a plane, change call sign, choose airport, set clouds, set time → Play

While I do agree, forgetting call signes is my fault I still do think that the changes are unesssicery
