You can take off with doors open. You won’t get a violation, but your customer reviews and Yelp ratings might not be great ⤵️

But your passengers and/or cargo clients might have a few strong words for you.

i doubt u could even get a violation 4 this in training. in expert server u most likely will due to the realism they enforce in that server

I can tell from experience that you won’t. I fly half of my flights with 3 doors open.
