I’m interested in maybe getting a joystick but there are some things I want to know first.
Are they compatible with all device including cellular devices or just iPad and tablets?
What is the best one for IF and which ones actually work for IF?

Well I’ve got the Thrustmaster Joystick. I use it with an iPad, but it just connects to Infinite Flight via Map Connect on a computer. I’m pretty sure it connects to a cellular device because theres no cable.
With it comes the throttle. They both feel and work brilliantly, even after the throttle fell onto the floor.
What device do you have? If anything apple, you will need a pc/laptop to be able to connect a stick as said before.

I’m on my phone and I am looking to use a tablet docking station to connect the joystick to my phone is that a possibility?
