I’m particular to the Expressway Visual at LGA. That’s a fun one to do, especially if it gets a little gusty as tends to happen in the NYC area.
You can do visual approach at pretty much every airport weather permitting. So, this boils down to scenic area. For me, this changes a lot. Most recently, it’s Dubrovnik for me. The view is quite something, especially when approaching from the North.

I can’t really say it the best, but one of my favourites would be Larnaca’s runway 04 approach because you get to view the half of the coastline of Cyprus and fly almost above a different airport alongside various different terrain kinds. The bad thing is that it doesn’t have ILS guidance which means that, yes you do have to do a visual, but you won’t know how far from the center line and and glideslope you really are.
Other of my favourites are:
●Brisbane 19L (beautiful sea)
●Charles de Gaul 08R (The parisian houses mixed with the green terrain)
●Rome Fiumicino 16R (green terrain with the seaside a bit further away, and (I think) a volcano or atleast a volcano-shaped mountain at the start of the approach)
Parkway visual in JFK with a heavy is amazing. The tight turn on final makes it pretty fun to do.

Something about flying between volcanoes always makes for a fun experience.
Another fun one is navigating a RWY 27 approach into KTEX! One, its a high elevation airport! Two, it sits on the edge of a plateau, AND swinging a CL35 around in the mountain valley is a little tricky!
