I was flying on two different occasions with two different aircraft (B773 and B789), and when I activated the APPR mode, the LOC quickly intercepted as it should and turned green, but the ALT kept flashing even till I was at the threshold of the runway (I was perfectly on the glideslope when I activated APPR, I was at 160 kts, I intercepted the ILS at literally the runway heading). What am I doing wrong exactly?

It’s better to be below the glide slope when activating APPR - if you activate it when bang on or slightly above - there’s the risk of it not capturing properly as you experienced.
