Do any of you have any suggestions for good sources to see all information on the aircrafts within Infinite Flight, for example Slowest Practical Speed, V1, ceiling. Do I just use the actual aircraft data sheet?

Use simbrief with OFP Layout JBU and it will give you the FLP setting, V1, VR and V2

There are a few resources for, example profile guides. You can just search them up by typing (aircraft name) profile guide. Here are some examples:
You can also find a lot of useful info just on google. Stuff like aircraft ceiling, stall speeds and more. Be mindful that for some of the older aircraft this info might not match what’s in game.
Can you also elaborate on what you mean by slowest practical speed. Are you referring to the ATC command?
Yes. I was asked to maintain the slowest practical speed when entering Auckland Airport with a CRJ900. I maintained 160ks. But then after appealing a violation from the same flight, the ATC appeal reviewer told me that th slowest practical speed for the CRJ900 is between 140-150.

Once again, since it depends on stall speeds, it’s something you can just google based on the aircraft. If you are not sure what I do is safely push the boundaries to a point where I am maintaining a speed that works for me and the controller.

I set for the a350
I believe SimBrief only has V-Speeds for certain aircraft…
Sadly the a350 doesn’t have the V1 speed.
A350 and A220 are so far the only aircraft that I know that don’t have V-speeds on Simbrief
