I just want them (if this is to be added) to remodel the whole plane to avoid the ugly winglet angles present on the current A320 family aircraft in game.

Would the Airbus A321XLR fall into this category? Would love to see this aircraft in IF.
A321XLR is in the family A320neo, so yes, it falls into this category
Besides sharklets being added to all the planes what are some noticiable differences that we will see in infinite flight?
I guess the engines. Some aircraft also have a different set of landing lights.
Whenever IF adds aircraft, they add them with functioning cockpits, animated doors and a (partial) cabin. Because of this you can‘t just add a new engine to the A320-family models. Thus, it is more sensible to add the NEOs whenever the A320-family gets reworked similar to what they did the the A330-900 when the A330-300 was reworked.
