If in real life the 757/767 have a similar flight deck why in infinite flight only the 757 has a 3d cockpit but not the 767

The 757 was recently remodeled, while the 767 is still considered a Legacy aircraft, meaning it has not been reworked.

Infinite Flight only reworks certain aircrafts at a time. The 757 was most recently updated in late 2020 whereas the 767 hasn’t been reworked yet. If you’re interested in supporting a rework for the 767, you can vote here:

The 767 used to have a flight deck but it was removed a few years ago

You can still access the 767 flight deck by moving the camera into the spot where it should be, if that makes sense.

If i remember correctly the flight deck was completely 2d and not up to the standards that the company wished to promote
