Does anyone know why the 747 models are missing the APPR function in the auto pilot settings? All the other big planes seem to have it.

Its mainly because the 747 is an old model made before APPR mode was a thing in Infinite Flight.
It will probably be added when the 747 eventually gets reworked, which you can vote for here:
