It says the event lasts from 7:00 pm to 9:00 pm (New York time). Does this mean we have to keep our airport open for a continuous two hours?

Well you have to stay open the minimum about of time when controlling (30 minutes for class Charlie and 1 hour for class bravo). If you could stay open for the full 2 hours, that would be amazing.
